Fried palm hearts with olive oil (Oxfam Fairtrade recipe)

Ingredients

  • 1 jar of palm hearts (we recommend you to use the Oxfam Fairtrade product)
  • 2 sprigs coriander
  • 2 sprigs parsley
  • 2 sprigs basil
  • 2 Tbsp of flour
  • 1/4 cup + 3 Tbsp of extra vierge olive oil (we recommend you to use the Oxfam Fairtrade product)
  • Salt
  • Pepper (we recommend you to use the Oxfam Fairtrade product)

Directions

Prepare the palm hearts and the spices
Let the palm hearts leak and dry them with kitchen paper. Wash and dry the coriander, the parsley and the basil and chop them. Put them in a bowl.

Fry the palm hearts
Put the flour on a plate and roll each piece of palm heart in it. Shake them a little to remove redundant flour.
Put the olive oil in a fry pan and heat it. Once the oil is hot, add the palm hearts. Let them fry for 3 to 4 minutes. Turn them carefully once in a while to make sure they do not burn. Sprinkle some salt on them.
Take the palm hearts one by one out of the fry pan and let them leak on some kitchen paper.
Pour the olive oil out of the fry pan.
Put the palm hearts back in the fry pan on low heat.
Sprinkle the spices over them and turn them, so they can absorb the spices on every side. Put them on a hot dish and serve them.
